Mochi Waffles
Waffles made with sweet rice flour, crisp-edged outside and chewy inside.
- Breakfast
- Makes about 4 · Up to 5 min each
Ingredients
- 1 large egg
- 3/4 cup whole milk
- 2 tbsp unsalted butter, gently melted
- 1/2 tsp fine sea salt
- 1 1/2 tsp baking powder
- 3/4 cup granulated sugar
- 1 1/2 cups Mochiko sweet rice flour (Koda Farms)
Steps
Whisk the egg in a large bowl until smooth and evenly mixed.
Add the wet ingredients and sugar: whisking constantly, pour in the milk and melted butter. Then whisk in the salt, baking powder and sugar until well combined.
Add the flour: whisk in the Mochiko until you have a smooth, thick, paste-like batter.
Fill a piping bag with the batter.
Heat the waffle iron on a normal setting, not "crispy" or "extra dark."
Cook: pipe the batter into the iron and cook for no more than 5 minutes.
Cook's Notes
- Don't overcook them. Don't use a "crispy" or "extra dark" setting on your waffle iron. There's a lot of sugar in the batter, and it will caramelize and make the waffles too hard.
- No need to grease the iron. The batter releases cleanly without it.
- Mochiko is sweet rice flour, also called glutinous rice flour. It's what makes these chewy. Regular flour won't work as a substitute.
- Serving idea: top them with bananas foster or your favorite fruit compote.
